A fried favorite from the Braman family kitchen, these lobster fritters are so simple, so delicious, so perfect!
Pairs well with our Sparkles sparkling white wine

Serves: 6

INGREDIENTS:
  • 1   Ketchup, bottled
  • 2   Lemons, juiced
  • 1 Tbsp Cumin powder
  • 2 Tbsp Garlic powder
  • ½ Cup Water
  • 12 4-6oz Lobster Tails, shelled
  • Peanut Oil for Frying
  • 5 Cups A.P. Flour
  • Salt and Pepper to season flour
INSTRUCTIONS:
  1. In a large bowl, whisk first five ingredients till well incorporated.
  2. Submerge Lobster meat in liquid mixture, cover with plastic wrap and place in refrigerator for 24 hours folding ingredients every 4-6 hours to ensure meat is well coated.
  3. Place Flour, Salt and Pepper in large bowl and toss.
  4. Remove Lobster from refrigerator. Gently toss Lobster meat into seasoned flour, place breaded pieces on a sheet pan till complete.
  5. Place back into refrigerator to chill for 30 minutes to an hour.
  6. Heat Peanut Oil to 365 degrees.
  7. Remove sheet pan of breaded Lobster meat from refrigerator. Gently add meat to fryer for 2-4 minutes, remove- place on paper towels and without delay sprinkle with salt.
Note: For best results, make sure oil reaches 365 degrees before placing next batch into fry.

Serve immediately and serve with SPARKLES!!!!
